After pouring, rinse the Su-ies in a large bowl with cold water. Peel the garlic and cut the ginger and then chop them finely.
Wash all the mushrooms. Cut the chestnut mushrooms and shiitakes medium slices. Cut the chanterelles. Drain the Su-oen as soon as it has filled up with water.
Heat a wok or frying pan. Put the wok oil in the pan and add the onion, garlic and ginger. Bake for 1 minute and then add all the mushrooms. Bake over high heat for 3 minutes. Add the soy sauce, the Oyster Sauce and the drained Su-ies. Stir well and let it bake for another 5 minutes. Taste if the Soe-oen is cooked or the whole is well flavored. Add herbs if necessary. If you do not find the Su-oen cooked enough, you can add a little water and let it boil for a while.
Sprinkle with pieces of chopped spring onion.
