Wash and prepare the vegetables. Try to make sure that all the ingredients are cut into similar sized pieces.
Heat a wok or frying pan. Add the oil and fry the chicken, onion and chillies, if using, for 2 minutes.
Add the peppers and celery. Cook for 1 minute and then add the sauce. Cook further for 1-2 minutes. Taste, and if needed, add more seasoning and/or cook for longer.
Remove from the heat and add the peanuts.
Serve with noodles or rice.
